Sweet potatoes are in season – here are 5 facts you should know about them
- Sweet potatoes are among the most nutritious vegetables and are deliciously sweet.
- They are high in vitamin C and manganese, and a source of vitamin B6 and dietary fibre. As with most vegetables, sweet potatoes are naturally cholesterol free, very low in sodium and virtually fat free.
- This root vegetable is high in betacarotene, which converts into vitamin A in the body. A 145g serving size (half a cup of cooked sweet potato) provides an adult with more than three times the minimum amount of vitamin A necessary to achieve and maintain optimum nutritional status.
- Eat them baked in the oven or in soups, casseroles, puddings or baked goods. They make a wonderful addition to stir-fries; cut them into thin sticks so that they will cook quickly.
- Sweet potatoes should be stored in a cool and dark place.
