Quince
Selection & Storage
Choose fruit that is firm, large and yellow. The yellow skin may be
mottled with brown spots that don’t affect the quality or flavour. Avoid
fruit that is green in colour (as they should be picked when full-yellow) or
that is brown all over, bruised, soft or shrivelled. Handle with care as
quinces bruise easily.
Quinces that are still partially green should
be kept at room temperature until they are ripe and completely yellow. Wrap
ripe quinces in a plastic bag and refrigerate for up to 2 months.
