Bell Peppers
Preparation & Serving

 
Wash peppers under running water and pat dry. Use a paring knife to cut the pepper in half lengthwise. Remove the stem and clean out the core and seeds. Place skin side down on the cutting board and then dice, slice or chop as desired. You can also leave the pepper whole for stuffed peppers or cut into rings by first cutting carefully around the stem, gently removing it, and then removing the seeds.
 
Serving ideas:

  • Add chunks of bell peppers to your ratatouille recipe and serve on toast for a veggie packed breakfast or lunch.
  • Include quartered and grilled bell peppers in your healthier cooked breakfast repertoire.
  • Quickly sauté thick slices of assorted bell pepper with garlic, basil and a dash of olive oil and red wine vinegar. Serve as an appetizer on bruschetta, as part of an antipasto platter, or a colourful side dish.
  • Stuff cored peppers with a mixture of halved baby tomatoes, chopped basil, garlic and onion, olive oil and salt and pepper. Bake in a preheated oven on a greased baking pan for 20 minutes and serve as a starter or side dish.
  • Add diced or thinly sliced peppers to chicken or tuna salad.
  • Thread large chunks of assorted bell peppers, mushrooms, onions and baby marrow onto skewers, brush lightly with garlic-infused olive oil, season and grill on the braai until tender. A great way to incorporate more veggies in your weekend braai!
  • Prepare a delicious roast pepper soup using onions, carrots, celery, roast red peppers, canned baby tomatoes, basil and chicken stock. Puree, add a dollop of plain yoghurt and serve.
  • Sliced peppers are the perfect addition to any stir fry. Diced peppers can also bulk up and add colour to mince dishes.Roast vegetables would be incomplete without an assortment of bell peppers to add a sweet tangy edge to the dish. Cut peppers into eighths and mix with chunks of seasonal vegetables, garlic cloves and fresh rosemary and thyme sprigs. Drizzle with olive oil, season and roast in a preheated oven.
