Bell Peppers

Choose peppers with deep, vivid colours, stems that are fresh and green, and skin that is firm, taut and shiny. Avoid peppers with blemishes, dark or soft spots and wrinkles. Peppers should feel heavy for their size.
 
Store unwashed peppers for up to one week in the vegetable compartment of your refrigerator. Green peppers will stay fresh a little longer than yellow, orange and red peppers. Once cut, peppers must be refrigerated in a plastic bag or air-tight container and used within a day or two. Bell peppers can be frozen without first being blanched, but preferably whole.
