Watermelon
There is no coincidence that the word “water” appears in watermelon. One
cup of diced watermelon contains about 90% water, making watermelon a
delicious thirst quencher that can help to keep the body optimally hydrated.
These large delicious fruit are usually oblong but they can be
round. Their skin is hard, and their colour varies from light green to dark
green, depending on the variety.
Watermelon flesh is usually a bright pink to red although less common
yellow flesh varieties are also available. The flesh is most often dotted
with shiny black seeds but seedless varieties are also grown. The red colour
is caused by the pigment lycopene, which acts as a powerful antioxidant in
the body. Watermelon is packed with as much, or more, lycopene per gram as a
raw tomato. Deep red flesh is the best indicator of the sweetest and most
nutritious watermelon.
