Watermelon
Preparation & Serving
The versatile watermelon can be served cut into halved, quartered or pizza-wedge slices for easy-eating. The soft flesh easily makes balls and cubes while the whole melon can be carved into various decorative shapes, such as a basket, which can be used to serve fruit salad.

Serving ideas:
  • Create a deliciously refreshing breakfast by alternating several layers of low fat muesli, small chunks of watermelon, low fat vanilla or banana-flavoured yoghurt in a tall wide glass.
  • Serve chilled watermelon soup as an appetiser with a difference by blending 4 cups of watermelon chunks, 2 tablespoons lemon juice, 2 tablespoons chopped fresh mint, 1 tablespoon sugar and ⅓ cup white wine. Add 1 fresh, sliced ginger root and chill for several hours. Remove the ginger slices and garnish with mint.
  • For a sweet and sour watermelon salad, combine 3 cups of watermelon balls combined with two English cucumbers (peeled and sliced into small slices) in a bowl and mix with a marinade made from ½ cup cider vinegar, 1 cup water, ½ cup sugar and 1 tablespoon of poppy seeds.
  • To make an attractive watermelon-feta salad, toss baby spinach leaves, sliced red onion, watermelon cubes, crumbled feta, olives and fresh oregano in a mixture of 1 part white wine vinegar with 3 parts olive oil, salt and pepper.
  • Asian honey soy glazed watermelon balls make a unique side dish. Make 12 watermelon balls with a melon baller and thread onto skewers. Make a sauce from 1 ½ cups sugar, ¾ cup oyster sauce, ⅓ cup Sherry wine and ⅓ cup hot water. Pour the sauce over the skewers and serve.
  • Add a burst of flavour to any fish dish with a watermelon salsa. Place 3 cups of diced watermelon, 2 minced jalapeno peppers, a bunch of chopped cilantro, ¼ cup lime juice and ¼ cup minced red onion in a medium bowl; stir well to combine. Season with salt and serve at room temperature or chilled.
  • Spread low fat smooth cottage cheese with chives onto a whole-wheat wrap and place about 30g of thinly sliced ham in the centre. Top the ham with some lettuce leaves and a few watermelon spears. Roll up and enjoy!
  • For a fun dessert, make watermelon cones! Using an ice cream scoop, make balls of watermelon and place them in the freezer on wax paper for no more than one hour. Remove from freezer and roll in vanilla yoghurt and top with coloured sprinkles. Place in an ice cream cone or paper cone cup.Cool down on a sweltering summer day - make a thirst-quenching watermelon spritzer by blending 4 cups of watermelon chunks (seeds removed) with 1 cup of ice, 2 tablespoons of sugar and 2 tablespoons of lime juice. Pour into a large jug and top with the sparkling water or soda. Garnish with sprigs of fresh mint.
