Watermelon
Selection & Storage

Watermelons should be heavy for their size with a rind that is smooth and neither too shiny nor too dull. Additionally the rind should be mostly green but the underside (that was touching the ground) should be a creamy to yellow colour. Avoid unripe fruit characterised by a light green/white rind, or fruit with soft, bruised or mould spots on the rind. Ripe watermelon should sound hollow when you knock on the rind.

Whole watermelons can be stored at room temperature, but once they have been cut they should be wrapped in plastic, refrigerated and eaten within a few days.
