Tomato
Selection & Storage

Choose brightly-coloured tomatoes that are firm, smooth, plump and heavy for their size. Depending on the variety, ripe tomatoes should be red or orange red. Avoid tomatoes that are wrinkled, cracked, and over-ripe or that have bruises or soft spots. 
 
Store your tomatoes at room temperature and out of direct sunlight until they are fully ripened, in order to best develop their flavour and aroma. Ripe tomatoes can then be stored in the refrigerator for up to 4 days. Tomatoes will gradually lose their flavour and become soft or watery if kept in the refrigerator too long. Remember to remove tomatoes from the fridge at least one hour before eating.
 
Whole, chopped or pureed tomatoes freeze well and can easily be added to cooked dishes such as soups, sauces and stews.
