Bell Peppers

Bell peppers, also known as sweet peppers, are a cultivar group of the species Capsicum annum and are native to South America. Although related to chilli peppers, bell peppers are not at all ‘hot’ but range in flavour from the slightly bitter green pepper to the mild sweet flavour of the orange and red pepper. Allowing the pepper to ripen on the plant allows the sweeter flavour to develop, which makes sense when you consider that red peppers are simply mature green peppers. Gorgeous glossy bell peppers are found in a range of vivid colours including green, yellow, orange and red. Not only do they add beautiful hues to your meals but all bell peppers are also famously good sources of vitamin C, with red peppers being the best vegetable source of vitamin C.

½ cup of chopped bell pepper (approximately ½ a large pepper) provides 1 serve of vegetables.
