Parsnips

 

Parsnips are starchy root vegetables. Although they resemble over-grown carrots, they are usually paler and have a stronger nutty flavour. Their flesh is ivory in colour.
 
Parsnips, like carrots, have been cultivated in Europe since Roman times and were considered a luxury item for the aristocracy in ancient Rome. Due to their naturally sweet flavour, parsnips were used to sweeten jams and cakes before sugar became widely available. They were usually served sweetened with honey or in fruited cakes and desserts.
 

Should you grow your own, this root vegetable is best harvested after the first frost as the cold converts the starch to sugar, sweetening the parsnip and mellowing the flavour.

Parsnips are available from May to July.
