Onions
Selection & Storage

Choose onions that have crisp, shiny, dry outer skins with a tightly closed neck. They should be firm, well shaped and clean without sprouts or green areas. Soft spots, dark patches, mould or moisture around the neck may indicate decay.
 
Onions should be stored at room temperature and away from bright light, in a space that is dry and well ventilated. Place onions in a wire basket or perforated bowl that has a raised base to allow for air to circulate underneath. Never store onions near potatoes as they will absorb the moisture and ethylene gas released by the potatoes causing them to spoil more readily. If stored correctly, onions will last for two to four weeks or more (depending on the variety) with the sweeter varieties having the shorter storage life.


 Left over cut onions can be stored wrapped in plastic or in a sealed container but must be used within a day or two to limit losses in nutrient content. Cooked onions can be stored in a sealed container for a few days but avoid using a metal container as this may cause the onions to discolour. Chopped onions can be frozen in a sealed freezer bag or container.
