Litchis

Select plump litchis with bright, even colouring (deep red) and smooth, rounded bumps on the skin, as this indicates that the fruit is mature and has swelled with juice. Choosing ripe litchis is important as they do not continue to ripen once picked, and unripe litchis are bitter to the taste. The skin is naturally leathery and tough but should remain pliable, not dry, dull or too dark. Avoid litchis that have blemishes, cracks, signs of decay at the stem or a fermented smell.

Keep litchis refrigerated for up to a week. They will begin to ferment as they age so use them quickly. Litchis can also be frozen in a freezer bag with the skin on.
