Kiwi
Preparation & Serving
The thin fuzzy skin of the kiwifruit can be eaten, but remember to first rinse the fruit and then rub its skin lightly to remove the hairs. After patting dry, cut the fruit into halves, quarters or slices and enjoy! If you prefer kiwifruit without the skin, cut the fruit in half and scoop out the flesh with a spoon. Otherwise cut off the top and bottom ends and peel with a vegetable peeler or knife. Slice, dice or quarter as you prefer.
Did you know that raw kiwifruit can be used to tenderize meat as it contains an enzyme called ‘actinidin’ that breaks down protein? Simply rub kiwifruit over meat, or mash the flesh and spread over the surface of the meat, letting it stand for about 15 minutes. This tenderizing effect is not always desired which is why kiwifruit should only be added to other foods, especially those containing dairy, just before serving.
Serving ideas:
- Kiwifruit are delicious eaten as is – simply cut in half and scoop out the flesh with a spoon.
- Blend kiwifruit with other fruit such as strawberries (a natural flavour compliment to kiwis), yoghurt and ice to create a delicious smoothly for breakfast or a refreshing snack on a hot summer’s day.
- Fruit salsa is a wonderful accompaniment to tortilla chips, chicken, steak or fish. Use chopped mango, kiwifruit, pineapple or orange (or a combination) to replace the tomato or fruit called for in your favourite salsa recipe.
- Blend kiwifruit and melon to create a gourmet chilled soup. If you prefer a creamier option, add some yoghurt before blending.
- Add kiwifruit to green salads for an exotic twist.
- Dress cooked penne or spiral-shape pasta with a mixture of olive oil, dijon mustard, wine vinegar, garlic and basil and mix together with strips of chicken breast, sliced kiwifruit and bell peppers for an original pasta salad.
- Use slices of kiwifruit on your tropical pizza instead of pineapple. Add the kiwifruit after removing the pizza from the oven.
- Kiwi fruit’s beautiful emerald green colour speckled with black seeds adds something special to fruit salads. Kiwis work well with any combination of fruits but are especially good with strawberries or tropical fruit such as mango, papaya and pineapple.
- Kiwifruit slices look and taste gorgeous layered on top of cheese cake, used in fruit tarts and as a topping/filling for desserts such as waffles and pancakes.
