Fennel (Bulb)
Selection & Storage
Choose well-rounded bulbs that are clean, firm and solid with a white to pale green colour. Avoid fennel that is discoloured, shows signs of splitting, bruising or spotting, or that has flowering buds (indicating the plant is past maturity). If retained, the stalks should be relatively straight and should not splay out to the sides too much. Both the leaves and the stalks should be green in colour. Fresh fennel has a lovely fragrant aroma, smelling subtly of liquorice.

Fennel should be stored in a plastic bag, in the crisper section of the refrigerator. It should keep for three to four days, but is best used as soon as possible as it tends to gradually lose its flavour as it ages. Fresh fennel can be frozen after first being blanched, but will not be as tasty as fresh fennel.
