Carrots are an excellent source of antioxidant compounds, and the richest vegetable source
of the pro-vitamin A carotenoids. Carotenoids referred to as provitamin A are members of
the carotenoid family that can be converted by the body into vitamin A. While vitamin A
is best known for its vital role in promoting good vision, this vitamin is also necessary
for immune function, healthy skin, growth, reproduction, and bone development. Carrots'
antioxidant compounds may also help protect against cardiovascular disease and cancer.
