Carrots
Preparation & Serving
Carrots are delicious eaten raw or cooked, peeled or with their skin. Wash carrots in cold
water or peel, and slice into rings, julienne strips or large chunks. Carrots may be cooked
using various methods: steam for 5–7 minutes until tender; microwave in a covered dish with
2 tablespoons water on high/100% power for 4–6 minutes, stirring after 4 minutes to ensure
even cooking; roast large chunks in moderately hot oven for 45–60 minutes. When preparing
frozen carrots, follow the instructions provided on the packaging.
Serving ideas:
- Use a juicer to blend carrots with oranges, pineapples or apples and add some ginger and mint for a deliciously fresh veggie and fruit drink.
- Dress up the good old grated carrot salad by adding slices of orange, a few squirts of lime juice, chopped coriander and a sprinkling of sesame seeds.
- Carrot soup is delicious and versatile – add curry or ginger for a spicy soup, or blend with other root veggies for a heart winter soup. Add carrot to your Vichyssoise for a cold summer soup option.
- Include crunchy baby carrots or chunky carrot sticks in your kids’ lunch box for a healthy snack, or serve with hummus dip when entertaining.
- Season cooked carrots with dill, tarragon, parsley, ginger, honey, lemon or orange juice.
- Keep a bag of frozen Julienne carrots in the freezer and add to casseroles or stews.
- Extend mince dishes by adding grated carrot – it’s a clever way to get fussy kids to eat their veggies!
- Use grated carrot in your baking – add to your favourite bran muffin, banana loaf and chocolate cake recipe. Pecan nuts and carrot are a winning combination for any baked treat!
