Brinjal

Brinjals (also called eggplants or aubergines) are members of the nightshade (Solanaceae) family, which also includes potatoes, tomatoes and peppers.
 
They are medium to large satin-skinned vegetables and can be pear-shaped or cylindrical. They are available in different sizes and can be the size of a golf ball or a small rugby ball.
 
While the most common colour is a rich purple, they can also be green or white and can even be striped.
 

Brinjals are often used as a meat substitute in cooking, which is why they are so often found in vegetarian recipes.

Half a cup of cooked brinjal (90g) provides one serving of vegetables.
