Beetroot

The beet (Beta vulgaris) is a plant in the amaranth family. The most well-known variety is probably the red or purple root vegetable known as the beetroot or garden beet. Other cultivated varieties include the leaf vegetables chard and spinach beet, as well as the root vegetables sugar beet, which is important in the production of table sugar.
 
Beets are deep red, or white in colour and the flesh is sweet and red. Beetroot is used as a red food colourant, for example to improve the colour of tomato paste, sauces, jams, jellies and ice cream.
 Beetroot can be eaten raw or cooked. Raw beet roots have a crunchy texture that turns soft and buttery when they are cooked. Beet leaves have a lively, bitter taste similar to chard.
