Asparagus

Folklore credits these delicious green spears with everything from curing toothaches to being a reproductive tonic.
 
Asparagus is the young shoot of a green plant with feathery leaves. Asparagus spears can be thick or thin, green or white. Green asparagus is more common and white asparagus has a stronger, earthier flavour.
 

In addition to the important nutrients it provides, such as folic acids, asparagus contains glutathione, which has potential cancer-fighting properties. 



Seasonal Availability
 
Fresh green asparagus is available from June to December.
White asparagus is available fresh from July to February.

Serving Size
 
Half a cup (90g) of cooked or canned asparagus provides one serving of vegetables.
