Green is the colour of life and hope, of nature and growth. Think of spring where green starts to push through all that is brown and drab. Going green is on everybody’s lips – protecting our planet and going back to the natural ways of life. Why? Because a green planet is a healthy planet. Chlorophyll is the pigment that turns our world green and enables plants to use the sun’s energy to generate food in the form of carbohydrates, and to convert carbon dioxide to life giving oxygen.
There is even more to green veggies and fruit that life-giving chlorophyll, they also provide us with phytochemicals such as lutein and zeaxanthin found in spinach and broccoli and indoles found in cruciferous vegetables like cabbage, broccoli, brussels sprouts, and kale.
- Lutein & Zeaxanthin: Are being studied for their role in maintaining good vision and for potentially reducing the risk of colon, breast, lung and skin cancer.
- Indoles: Are being studied for the role they may play in reducing the risk of certain cancers.
